The perfect winter appetizer, batter fish is a quick and easy recipe to prepare at home. Battered with maida and parsley and seasoned with just salt and pepper, here’s our version of the quintessential batter fried which is easy and quick to prepare. There’s no better comfort food for a Newfoundlander than fish and chips. Everyone has their own opinions on where to get the best fee and chee, but with a little effort you can make your own. I like this version very much. The trick to getting it right is the consistency of the batter.

Ingredients:

500 gms any white firm flesh fish fillet (river sole or sea bass)
1 tbsp white flour (maida)
Handful of parsley, finely chopped
Oil (for deep frying)
For the batter:
1 tsp baking powder
a cup white flour (maida)
1 egg (optional)
1 cup soda water
for garnishing salt and pepper

How to make Fish and Chips:

1. Clean the fish under running water, pat dry and roll it in flour and parsley, keep aside
2. For the batter, in a clean bowl whisk together soda water, baking powder, egg, flour and the seasoning into a smooth consistency
3. Heat the oil in wok/ deep pan
4. Now dip each piece of it in batter, coating them well and gently place them into hot oil.
5. Fry on medium heat till golden
6. Serve with a wedge of lemon, chips with salt and vinegar.
