We Tried Mahira Khan’s Signature “Seviyon ka Zarda” on Eid
A few months ago, Mahira Khan taught her Mashion subscribers how her aunt makes an incredibly delicious heirloom recipe called “Seviyon ka Zarda” on every Eid. This recipe was passed on from her grandmother down to her daughter and now, down to Mahira Khan, her niece. It got posted on Youtube back in 2019, but now that in 2021 we had all the time in the world, I decided to give it a go.
Mahira, although a self-proclaimed newbie in the kitchen, demonstrated the recipe with so much ease that I was compelled to give it a shot. Was it worth the effort? Read on to find out.
Let me start off by saying that this stellar recipe was an absolute winner in my family. The guests couldn’t stop themselves from getting another serving, they kept praising my cooking skills endlessly and gave me extra gift money (apart from my Eidi *winks*) as my ‘inaam’ for making such a delectable treat. My grandmother complimented the sweetness factor of the seviyaan, which towards her was perfect! Needless to say, you all need to try this! It is desi-household approved!

What you need:
- 7 tbsp of Desi Ghee (although she didn’t mention the quantity in the vid)
- 1 packet of Vermicelli
- 5 cups of Milk
- 10 tbsp of Sugar
- 5 pods of Cardamom (crushed open)
- Assorted nuts (optional)
Method:
- In a non-stick cooking pot, put the ghee and cardamom and roast it on medium flame. Just when the pods start to crackle, put in the vermicelli and roast that too.
- In a separate pot, pour the milk and add 10 tbsp of sugar in it. Let it come to a boil on medium flame. Immediately remove from heat.
- Pour the sweetened milk into the pot with vermicelli, cover it with a lid and let it cook on low flame for 15-20 min, or until the milk is fully dried out.
- Serve in a dish and garnish with pistachios, almonds, and walnuts to your heart’s content. Bon Appetit!
